Roasted Pepper Hummus

It's been a long time since I've bought store bought hummus because it's one of the quickest things you can make.  Cooking dried beans is great if you have the time but you can get just as good results from using canned chick peas/Garbanzo beans.

Nutritionally this is a great snack packed with good fats and protein between the Olive Oil and beans.

You can make this without the roasted pepper but if you have them on hand they give a great flavor.  I suggest a yellow/orange or red pepper over the green varieties because roasting bring out that sweet scorched flavor.  You can roast peppers on a gas or electric stove top right on the burner, turning frequently as they begin to blister, snap and whistle.  I LOVE the smell of roasting peppers.  The BBQ is also a great place to roast.  Once blackened just put them into a covered container while you work on the rest of the ingredients.  (This will steam them from the inside and when you're ready you can just peel away the blistered skin with your fingers and then chop the flesh up.  It's perfectly fine to leave some of the skin on.

Things You'll Need:

2 Cans rinsed and drained garbanzo beans
6 ounces roasted red bell peppers
1 jalapeno, seeded, diced
1 tablespoon chopped garlic
3 tablespoons chopped cilantro leaves
1 teaspoon paprika
3 tablespoons chopped onion
1 teaspoon freshly cracked black pepper
1 tablespoon chipotle pepper in adobo
1/4 cup extra-virgin olive oil + 2TBSP Tahini



Add all ingredients except olive oil into a food processor.  Pulse a few times then leave on while you slowly pour the Olive Oil in.  It should start to create a creamy texture.  You can thin it out with a bit of water if needed.  Add more oil if still too gritty.  Taste test several times and add salt if needed.

Serve with toasted Pita Chips, sliced Veggies, or use as a spread in Wraps.  Stores for several weeks in the refrigerator, or you can even freeze extra if you double the batch.  You'll never want to buy the store bought again now that you can control what goes into it, or make your own unique flavors.
