Homemade Pasta with Sauteed Radish and Onion

So you've been following the EV Blog and you're making your own pasta now right?  No?  You missed that post?  Well be sure to check it out here.   The great thing about making pasta is that you can freeze it and have a batch ready to cook in a couple of minutes on the weekday for recipes like this.  Who wouldn't want Fresh homemade Pasta on a Monday night?  Right?  

What I love about this recipe is that well, it's MINE and it uses Radishes.  So many of us reserve radishes only for salads when in fact cooked radishes are amazing.  Another great asset to them is that you can also cook the greens which are loaded with nutrients.  Barely anything of the Radish goes to waste with this recipe.

Gather Up:

Some Frozen Homemade Fettuccine Pasta

1 Bunch of Radishes,  chopped AND the greens washed and chopped.

6 TBSP Olive Oil

1/2 Red Onion Chopped

4 Cloves of Garlic minced

Salt and Pepper to Taste

1.  Saute the Radishes, Radish Greens, and onions over medium heat in 1 TBSP oil.  Add Garlic once the onions are translucent.  

2.  Cook the FRESH Frozen pasta in boiling, salted water for about 5 minutes or until tender.  Add the remaining oil to the saute and season with salt and pepper.

3.  Remove Saute from heat and drain the pasta.  Toss lightly in the saute mixture and serve.

Top with freshly grated Parmesan cheese if desired.

 

An Easy FRESH dinner in less than 20 minutes if you made the pasta ahead of time.
