Preparation is fairly long on this fried Indian flat bread but well worth it. It's the perfect addition to any stew, soup or curry. The longest part of the preparation is waiting for the dough to rise which can be about 2-4 hours. Another word of caution is that when frying it's best to use high heat with a cast iron skillet. The downfall to this is that it can be smokey so you may want to be proactive and take the batteries out of the nearest smoke detector. No doubt you would otherwise be running in panic mode to clear the air, literally. The blackened and scorched bread is very tasty!
