Chickpea Tikka Masala

I adore the spices of Indian Food.  In fact we have one of the best Indian restaurants close to our home in Denver and never pass up the opportunity to go there.  When the budget is a little tighter though, this is a very easy and tasty one you can make right at home with no special ingredients.  As a vegetarian I almost always have a huge stock of canned chick peas on hand so I only needed a few additional ingredients from the grocery store.  Tikka Masala has a more creamy texture than some other curries because of the added yogurt to the sauce.  It has almost a slight tang and spice flavor overall. 

This meal can serve 4 in under 30 minutes.  If you have the time on a weekend, you can add some Naan bread to complete this meal.  You can find a great Naan recipe here.

 


Ingredients: 

1 TBSP Vegetable Oil

1/2 medium onion diced

1 TBSP Garam Masala

1 TBSP Tomato Paste

2 TSP. Grated fresh ginger

1 serrano chile, minced

2 15-oz cans chickpeas drained and rinsed

1 28-0z can crushed tomatoes

1/2 cup Plain Greek-style yogurt

1/4 Cup chopped cilantro

 

1.  Heat the oil in skillet over medium heat and add onion.  Saute for 5 minutes then add garam masala, tomato paste, ginger and chile.  Season with salt and pepper.  Saute 1 minute.

2. Stir in chickpeas and tomatoes.  Bring to a boil, reduce heat to medium-low and simmer for 15 minutes.  Remove from heat then add cilantro and yogurt.  Stir well and serve.


This can be served alone, with Naan bread or any rice.
