Apple Cheddar Turnovers

In an effort not to waste some apples that were starting to go downhill on the freshness scale, using them for turnovers is a great option.  These are easy to make and you can use a homemade pie crust or buy store bought ready to go.

The twist with these is the slice of cheddar inside which pairs nicely with the apples.

You will need:

2 Cups AP flour

1/2 Cup Shortening

4 Applies, peeled, cored, and chopped

2 Slices of sharp cheddar cheese or ~1/4 cup shredded

1 TBSP Cinnamon

1/2 TSP Ground ginger

2 TBSP White or brown sugar

1 TSP lemon juice

1 egg white

 

Preheat oven to 400.

1.  Combine the chopped apples with lemon juice, spices and then toss well with the sugar.  The filling will be a little dry but as they cook the juices from the apples will come out.

2.  Make the pie crust by cutting in the shortening with the flour using a pastry cutter.  This is ready when it forms small pea sized chunks.  Add TSP ice cold water at a time, gently tossing with a fork.  Continue adding the water slowly until you can form a ball with the dough.  It should still crumble if squeezed.  Roll 1/2 the the dough at a time, out onto a floured surface until you have 2 squares about the size of sheet of paper.  Trim the edges with a knife and cut this in half.

3.  Place the apple mixture onto one side of the crust.  Add 1/2 slice of cheddar cheese on top then brush the edges of the dough with egg white.  Fold the empty side of the crust over on top of the filling and press to seal with a fork. 

4. Make three slices into the top of each turnover and place onto a baking sheet that has been lined with parchment or greased.

5.  Brush each turnover with the remaining egg white and sprinkle sea salt on top.

Bake for 30-40 minutes or until golden and apple/cheese starting to ooze out of the top.
