Mustard Greens and Romaine Salad

In this recipe we want a blend of crisp Romaine and a more savory/bitter leafy green.  Mustard greens work very well because they are spicy.  Watercress or Arugala would also work well to counter the sweetness of the Romaine.  This uses an easy to make homemade blue cheese dressing.  If Pressed for time you can use a store bought dressing but this is so easy to make that it's just going to taste better if you make it yourself.  This is one of those salads where less is more.  It's easy to want to add random ingredients but this is a simple salad with few ingredients.

Gather Up:

4 Cups bite sized Romaine Lettuce

2 Cups Mustard Greens

1/3 Cup Sliced Red Onions

3 TBSP Buttermilk

3 TBSP Blue Cheese

1 TBSP Mayo 

Salt and Pepper

1.  Toss the lettuce and mustard greens together in a large bowl. 

2. In a small bowl combine the buttermilk, Mayo, and Cheese.  Use a fork to smoosh the cheese into small pieces and mix well.  Season with Salt and Pepper to taste.

3.  Plate the lettuce, then place slices of the onion on top.  Spoon the dressing over the top and serve.
