Baked Cheesy Tomatoes

In a few months hopefully there will tons of fresh tomatoes in the garden but until then it does seem like some great tomatoes are starting to emerge from the Grocery stores.  Since nice Beefstake tomatoes prompted this easy recipe.  Baked with spices, oil, and herbs these are really easy to make and only take about 25 minutes in the oven.

Start with RIPE red tomatoes and expect one tomato per person as a side dish.

Preheat the oven to 425.  Slice each tomato in half, removing any stems if present.  Place into a parchment lined baking pan, and drizzle with olive oil.  Season with generous amounts of salt and pepper, as well as fresh or dried herbs of your choice.  Basil, Oregano, or Thyme (or all three!) work very well for this.  Top with a mixture of Mozzarella and Parmesan cheese.  Bake for 25 minutes or until cheese is golden and bubbly.  These taste like a fresh pasta sauce and are a great companion to any dish.
