Quinoa Avocado Salad in a Jar

I really love the presentation of this salad in a jar.  The layers remind me of a garden where there red Quinoa looks like the soil and the avocado and sprouts just seem to come alive.  This would be a great light summer salad but also great with any meal since it's not very filling.

I can't wait to try this when it's hot outside out on the patio!


Ingredients

1/3 Cup red Quinoa

1/2 tsp chili powder

3 tsp lime juice

2 tsp olive oil

1 ripe avocado

1/3 Cup spicy sprouts

1.  bring the Quinoa to a boil with 1 Cup of water and 1/4 tsp chili power.  Simmer, covered about 15 minutes until the liquid is gone.

2. Whisk together the lime juice, Olive Oil, and chili powder.  Coat with cooked Quinoa.

3.  Divide the Quinoa 4 mason jars.  Top with cubed avocado and sprouts.  

4.  Sprinkle some sea salt and pepper on top.
